I've been through it with Rolemaster and Shadowrun and now with Blue Planet v2 .... Here is how I deal with it... First, i DO NOT rebuild everything that has come before the revisions. I do, however, rebuild the major NPCs to the new system as soon as it is realistic. This may mean that they get rebuilt the week before showing up , but i TRY to do it before then. The remainder of the campaign setting gets converted as it is needed. Second, remember that is not the Moderator's job to rebuild the PCs ... especially now with a separate Players Guide (Yes ... I am one of THOSE GMs that prefer to keep GM info away from my players. I ask my players not to buy suppliments until i have had a chance to go over them). What I do in this cas, is ask for the most recent copy of the PCs, and tell the players to do their own conversions. If there is TOO large a discrepancy between the character sheet in my possession and the revised character, I talk to the player and ask what is the motivation. We BOTH have a pretty good feel for the character, and if the player has a logical reason for the changes, they stand. If not, I make some suggestions and have them redo the conversion. This is not too different from the original character creation process in my games. I believe that GMs should be deeply involved in the character creation because the PCs are the focus of any lasting game. Finally, if you still decide to keep to the "old" system, be aware that not all new materials can be easily reverse engineered. Sometimes a system change affects game mechanics in a negative manner. This may be a BIG problem in BP, with Fluid Mechanics being written for v2. I am not saying to abandon your plans to keep with v1, but conversion doesnt have to mean shutting down for a month to retool. TSR is about to release AD&D third ed, and we still play first edition. Even worse, my favorite Shadow Run character CANT be redesigned for third ed ... he breaks too many of the new "game balance" rules. We all have something like this in our background. The reason we all do this is to have fun.
